Nothing better than quick but healthy meals. Who wants to spend all day in the kitchen. The weather is far too good.
This is a healthy option and so quick and easy to make.
Organic Smoked Salmon and Cheese Frittata
Frittata is an egg-based dish similar to an omelette or quiche, enriched with additional ingredients such as meats, cheeses, vegetables or pasta. It may be flavored with herbs.
The Italian word frittata derives from fritto, the past participle of "to fry" frittata was seen as equivalent to the "omelette"
There are four key differences from a conventional omelette:
* There is always at least one optional ingredient in a Frittata (i.e. there is no such thing as a frittata nature), and such ingredients are combined with the beaten egg mixture while the eggs are still raw, rather than being laid over the mostly-cooked egg mixture before it is folded, as in a conventional omelette. Eggs for frittata may be beaten vigorously to incorporate more air than traditional savory omelettes, to allow a deeper filling and a fluffier result.
* The mixture is cooked over a low heat, more slowly than an omelette, for at least 5–10 minutes, typically 15, until the underside is set but the top is still runny.
* The part-cooked frittata is not folded to enclose its contents like an omelette but is instead either turned over in full, or grilled briefly under an intense salamander to set the top layer, or baked for around five minutes.
* Unlike an omelette, which is generally served whole to a single diner, a frittata is usually divided into slices. It may be served hot or cold, accompanied by fresh salads, bread, beans, olives, etc.
A Irish frittata special treat that’s quick and easy to prepare
Organic Irish Smoked Salmon and Irish Cheese Frittata
Ingredients
8 organic eggs
2 tablespoons chives, chopped
1 tablespoon basil, chopped
Salt and black pepper
1 tablespoon. olive oil
50g Irish cream cheese, diced
75g organic Irish smoked salmon, thinly sliced and chopped
Organic red onion slices to garnish
Salad leaves and brown bread to serve
To Cook: Set the grill to high. Whisk the eggs with the
chives, basil and seasoning.
Heat the olive oil in a non-stick pan. Pour in the egg
mixture, stir for a moment or two, allowing the liquid egg
to flow on to the base of the pan. Scatter on the cream
cheese and continue cooking until the egg is almost set
but still moist on top, add the smoked salmon pieces,
press on salmon lightly.
Place the pan under the hot grill to finish cooking 1-2
minutes. Cool 2-3 minutes, and then loosen edge with
spatula and slide onto a large plate. Cut into wedges
and serve warm. Garnish with red onion slices.
Serve with salad leaves and brown bread.
